Healthy Breakfast Cookies
- 1 Cup Quick Oats or Bob's Red Mill 7 Grain Hot Cereal (for gluten free)
- 2 Very ripe bananas
- 1/8 cup chopped nuts or chocolate chips (optional)
- Dash of cinnamon or your favorite baking spice (I like cinnamon or cardamom)
Makes about 16 cookies
Heat the oven to 350 and spray a baking sheet with non-stick spray.
Mash the bananas in a medium bowl until smooth; add the hot cereal, chopped nuts and cinnamon and mix until all of the ingredients are evenly distributed in the banana mash.
With a tablespoon, measure out each cookie onto the baking sheet. Place the cookies in the oven and bake for 12-15 minutes.
