Healthy Lunch Recipe
Egg Salad Lunch
Ingredients
• 2 slices reduced calorie wheat bread
• 4 eggs
• 1 teaspoon yellow mustard
• 1 teaspoon sweet pickle relish
• 1 tablespoon light mayonnaise
• 1 tablespoon chopped celery
• 2 teaspoons finely diced green onions
• ½ teaspoon dillweed
• 1 tsp curry
• ½ tsp cumin
• ½ cup skim milk
• 2 small fresh plums
Directions:
• Boil eggs and cool. Cut in half and remove yolks. Set aside 2 yolks for another recipe.
• Mash egg whites and remaining yolks with tines of a fork. Add in mustard, relish, mayonnaise, celery, green onions and dillweed. Stir until combined.
• Toast bread. Spoon egg salad onto bread to form a sandwich.
• Serve with a glass of milk and plums.
